Meiji Chelsea Kokutou Black Sugar

Meiji Chelsea Kokutou Black SugarAs a kid I would eat brown sugar straight from the bag. I loved finding chunks of the stuff in my oatmeal. As an adult I discovered muscovado sugar and love finding new ways to use it in everyday food.

As a candy, this molasses rich sugar is quite popular in Japan, where Japanese prize their Okanawan Black Sugar. It’s mostly found in hard candies but sometimes used in caramels. I was excited to see the Meiji Chelsea line of hard butterscotch candies came out with a variety pack based on flavors of Kuro Sato called Chelsea Kokutou Black Sugar. The flavors are milk, black sugar and ginger.

The packaging is always charming. A stark black background with little calico inspired flowers dot the wrappers. In this case each wrapper is a different muted pastel with black flowers on it.

The candy comes in two different packaging styles. There are little flat boxes that hold foil wrapped pieces of butterscotch, then there are the bags, which often have assortments instead of a single flavor. The sealed wrappers are great because they keep the candies from becoming sticky. However, the candy is expensive. I think I paid 3.99 for this package that holds only 2.5 ounces. I’ve seen other packages for sale online for over $5 a package as well.

The light purple wrapper holds the Milk flavored piece. It looks like ordinary butterscotch but tastes like sweet, creamy rum. The texture of Chelsea is extraordinary. It’s smooth. The pieces always look and sound like glass. If you like to let your candy dissolve, these last a long time with consistent flavor all the way through. If you’re a cruncher, these are crispy and buttery.

The milk flavor mellows the strength of the black sugar, which can have bitter components to it. It’s fresh tasting, like a very mellow black tea.

The light red wrappers hold the best of all, the Black Sugar flavor. The pieces are very dark brown, glossy and hard. The flavor is dark and complex. It’s like that charcoal-like flavor of a toasted marshmallow. It’s more earthy and cereal-like than just molasses. It’s creamy and smooth, woodsy with a hint of toffee and coffee.

What’s so amazing about black sugar are all the flavors and nuances. It’s like chocolate, coffee or wine in that way.

The lightest looking piece of the set is the Ginger. This is less about the black sugar but an interesting combination of flavors. The ginger is woodsy and smooth with a warm component to it. The flavor is less of the tangy fresh juice flavor and more of the dried ginger with milk profile. The black sugar is lost, so the sugary notes are more like maple than molasses. Still, a great ginger candy, far and away better than most other toffee style gingers.

This was a great mix and I found it hard not to eat them all right away. I even tried going back to Little Tokyo to find more, but couldn’t find a single grocer that carried them still. I’m very sad, but hoping that Meiji will bring back the Black Sugar at least as a single flavor in the boxes at some point and I will stock up.

Wild Ophelia Milk Chocolate Bar Peanut Butter & BananaEarly this year Katrina Markoff of Vosges Haut-Chocolate spun off a new mass-market brand called Wild Ophelia.

The idea was to be able to reach more consumers with Markoff’s taste creations without sacrificing the artisan scale of the original Vosges but still reach more consumers. (Source) I have trouble believing that Vosges is truly artisan any longer since they’re a $30 million company. The Wild Ophelia website feature a hokey story about this mascot for the brand that dipped beef jerky in milk chocolate instead of the traditional lemonade stand as a kid. The story reads like a non-traditional innovator’s checklist:

I was nicknamed “Wild Ophelia” following a few smart plans I hatched during my childhood years, while running the sweet stand at our summer garage sales. Instead of the typical, boring lemonade, I decided to serve beef jerky dipped in molten milk chocolate that I melted in the hot sun. From there, my little side-street menu swiftly transitioned to other chocolate experimentations… fresh peaches and hibiscus, sweet cherries and pecans, BBQ potato chips.

Though I’m most at peace watching the sun set from my front porch swing, I also have an itch for the open road. I’ve crossed this great country a number of times, usually without an agenda and primarily on 2-lane roads. Through my adventures, I’ve befriended a number of like-minded American farmers and food artisans who have inspired my creations.

But again, it’s all just made up. The real story of someone wanting to extend their brand isn’t good enough, yet with this pure fiction they want us to also come on board with the real stories of the artisans that provide some of the key ingredients in the bar flavors.

The Wild Ophelia line features bars that cost one third less than the Vosges bars, but of course are about one third smaller in size. That’s fine with me in principal at least, since I often find the 3 ounce bars a bit too much for me and my short attention span. The new line of bars feature flavors like Beef Jerky, Southern Hibiscus Peach, Salted Chowchilla Almond, New Orleans Chili, Sweet Cherry Pecan, Mount Sequoia Granola, Smokehouse BBQ Potato Chips and the final one, Peanut Butter & Banana is what I picked up.

The Milk Chocolate Bar Peanut Butter & Banana is made with a dark milk chocolate of 41% cacao. Then it’s mixed with pieces of dried Williams Banana, which is grown on the island of Kauai in Hawaii. Peanut butter is mixed into the chocolate.

It sounds great, though I wish I knew as much about the chocolate and the origin of the peanuts as I now do about the bananas.

The bar is soft and has a smooth break. It looks like the pieces are quite small and well mixed in. It has a strong scent of roasted peanuts and a little note of maple or sweet hot cocoa.

Though the bar has a peanutty aroma, the chocolate, it tastes of both chocolate and peanut butter, like someone melted and mixed together a peanut butter cup. It’s a little grittier and fudgier than a standard milk chocolate bar. The heartiness is then highlighted with bits of dried bananas. They’re soft and chewy, but still kind of tough. They’re sweet and have a strong banana flavor with a fair bit of tanginess.

I found the leathery and sticky banana bits a little off-putting, they’d get stuck in my teeth. But the overall ratios and the fact that it’s not a sweet bar but still has that satisfaction of a sweet snack is really quite good. There are little bits of salt in it as well, and though it tastes like a lot because they’re little granules, it’s actually only 30mg for a serving.

Now for the transparency part. The company says “Wild Ophelia is a uniquely American chocolate brand that features all-natural and often organic ingredients sourced from small farms and artisans to tell an American story. All Wild Ophelia products are made with 100% renewable energy and packaged in 100% recycled board. Proudly, the Wild Ophelia line is developed by a certified women’s business enterprise.” Nowhere could I find a statement about the sourcing of the chocolate (none was listed as organic, the only organic ingredient in this bar was the peanut butter). So I can’t say anything about the ethics of the sourcing of the cacao and at $5 for a 2 ounce bar of chocolate, I’d prefer that the dairy products in it also be organic.

Wild Ophelia is gluten free, but their facility uses dairy, soy, peanuts, tree nuts and sesame. I love many of Vosges products, but have had to stop eating them because of walnut contamination issues (which is fully disclosed on the packages). I did not have any problems with this bar and none of the Wild Opheila products have walnuts in them (my only allergy).

Werther’s Original Caramel Apple Filled

Werther's Original Caramel Apple FilledI wrote that Storck was introducing a new flavor of Werther’s Original caramels back in May, and finally found some in stores.

They’re called Werther’s Original Caramel Apple Filled Hard Candies and are a bit of a curiosity to me. They’re a green apple filling covered with a hard shell of the famous Werther’s butter toffee candy.

The objective is to emulate a caramel coated green apple.

The ingredient list for this strange candy creation is, well, long. Here’s another example of a European candy (like the downscale version of Panda Licorice) that uses glucose-fructose syrup, which is the same as High Fructose Corn Syrup, except it’s made from something other than corn. There are other fun things in there like artificial colors though it does use actual concentrated apple juice.

Werther's Original Caramel Apple FilledAs much as I was turned off by the idea of the candy, and the idea that they cheaped out and used glucose-fructose syrup instead of just sugar I actually enjoyed them.

They look like a nice candy from the outside. They were in good shape, no crushed or sticky pieces. They’re hard and glossy and smell buttery-sweet. The candy shell is exactly what I’d expect a Wether’s candy to taste like. It’s silky smooth and sweet with a hint of salt. The shell is thin and the center is soft. It’s easy to just chew up the candy, which I ended up doing most of the time. The center is a soft goo with an apple flavoring, kind of like apple juice instead of a Jolly Rancher candy. It’s sweet and flavorful but without an artificial sourness to it.

Overall, it’s an interesting take on the apple and caramel combination. Sweet, salty and a little fruity. I ate the whole bag (which wasn’t hard considering that the fact that for a buck there were only 12 pieces in it. I don’t think I’d buy them again, but I do think they’re better than I gave them credit for in the concept stage.

Ghirardelli Squares Milk & Hazelnut Crisp

Ghirardelli Squares Milk & Hazelnut CrispI was browsing for new candy at Target and noticed these Ghirardelli Squares Milk & Hazelnut Crisp.

The stand up bag has a little banner across the top that says “now more chocolate in every bag.” I did a little research and it appears that the regular bags used to have 5.25 ounces and now they have 5.58 ounces. Not exactly noteworthy, especially when they don’t spell out the exact amount.

Milk Chocolate with Hazelnut Crisp Filling sounds pretty delicious to me. I wasn’t sure what a hazelnut crisp would actualy be, though the front of the package shows a little bowl of crisped rice and a few hazelnuts. So in my head it was going to be a mix of some sort of hazelnut paste and the crunchies inside the milk chocolate squares.

The mylar sealed squares are actually aqua, one of those colors that doesn’t photograph well and turns out more like light blue. Even with the heat in Southern California, these were still looking fantastic right out of the package. The chocolate squares are glossy and perfectly molded with the Ghiradelli eagle on top.

The ingredients aren’t great. It’s not a simple hazelnut paste center, instead there are lots of extra ingredients I don’t much care for like palm and palm kernel oil, distilled monoglycerides (well, I ‘m not sure how I feel about those), partially hudrogenated vegetable oils (cottonseed & soybean) plus TBHQ, a preservative. There’s no mention of gluten, other tree nuts or peanuts as possible allergens.

The squares smell very buttery, less sweet than I expected with a light hint of hazelnuts. The bite is soft, but it’s summer and the chocolates were still tempered well enough that they hadn’t bloomed. The milk chocolate is sweet and sticky but has a good milk and toffee flavor to it. The creamy center is also sweet with more of a milky and malty flavor to it and only a hint of the promised toasted hazelnuts. The crisped rice is in the form of little ball, like bbs. It’s a nice texture, the whole this in very satisfying though doesn’t have quite enough of an intense or defined punch for me. Overall, I liked them, but not enough that I feel like finishing the bag. (I’ve eaten five though, just to be sure.) Something in a darker chocolate might be better suited to me, but if you’re into a sweet that has a bit of texture, this might be your thing.

Nestle Butterfinger Bites

Butterfinger BitesButterfinger Bites made by Nestle come in a few sizes, but I picked up their theater box. It was a helpful box with a little image of the candy with the words “actual bite size” pointing to one of them that is actually far smaller than anything inside the box.

The box also says that they’re new, though I’m pretty sure Nestle has made these before, or something amazingly similar. Then the box also says that they’re Easy To Eat! which is a huge relief, because Butterfingers are menacingly difficult what with all that wrapper and ... largeness.

The box actually had 3.5 ounces of candy bites in it, which is a pretty decent deal for a buck. Of course it’s also filled with Butterfinger Bites, so maybe I’d be happier with less than 3.5 ounces considering what dismal tasting candy it actually is.

There are so many things wrong with this, like the fact that there’s more hydrogenated palm kernel oil in it than cocoa (and no chocolate), artificial colors, artificial flavors and preservatives.

The pieces are about an inch long and are, in fact, easy to eat. If you don’t have a sense of smell. I found the odor simply offputting. It’s overly sweet, artificial and reminds me of a combination of birthday cake and fake butter topping. They are not even vaguely peanutty or chocolatey.

The pieces are lighter and crunchier than a regular Butterfinger. The mockolate coating is chalky looking, very light in color and not the slightest bit chocolatey. The crispy layers of the center are wonderfully crispy and do have a lovely proportion of salt. But that’s about it, the level of peanut butter is so far below what I love in candies like Chick-O-Stick or Clark Bars that it’s more like a butter flavored center.

The mockolate coating really ruins it, it tastes about as good as sucking on the cardboard box. These can’t be stale (they were plenty crispy and they expiry is more than 6 months away), they’re just poor excuses for candy. What’s sad is that I would absolutely love to buy little nuggets of real chocolate covered peanut butter crisp, even at twice the price.

I have a little poll running over there on the sidebar about what companies should do when they need to cut costs. Maybe we should let them know that making bad candy really isn’t a way to increase sales.

Flix Candy Flix Mix

Flix Candy Flix MixIn the theater box section at the Big Lots I spotted this package of Milk Chocolate Peanut Butter Flix Mix. At only a buck, I figured I should try it, though I was a little taken aback at the lightness of it, only 2.2 ounces, when many other theater boxes can be 6 ounces.

Flix makes a big deal on the back of the box that these are Made in USA. But a large part of the back of the box is also devoted to the extremely long ingredients list. This is explained by the fact that one of the macroingredients is a rice pillow which includes a large number of fortifications such as niaciniamide and thiamin mononitrate.

One I opened the box I understood why it was so light, there is a cellophane pouch inside that is the appropriate size for the box, these things are just darn airy, so constitute more volume than say, Mike and Ike.

The candy itself is very simple. It’s chocolate covered Rice Chex cereal (or a generic equivalent). The milk chocolate coating seems to have some peanut butter mixed in, though if you gave these to me without saying anything about the peanut butter, I might have missed that nuance. The whole thing is then dusted, unnecessarily, in powdered sugar.

The rice pillow at the center is crispy and has a large airy center. There’s a hint of malt and a little salt to it, so it give a savory base to the mix that’s sorely needed. The milk chocolate and peanut butter coating is sweet. There’s a mild milky flavor to it, but nothing that can stand up to the flavor of the rice cereal ... yup, the bland Rice Chex are more vibrant than this chocolate. Still, the combination works. It’s a bit on the sweet side but the crispy texture and mild contributions from the peanut butter and chocolate manage to combine well.

I don’t think I’d buy this brand again, but I have to wonder if there are better ones out there. I also have to wonder if someone could do a verified gluten free version of this, because I bet there are a lot of gluten free folks out there longing for a crispy candy mix.

The allergen list is pretty complete and includes soy, dairy, milk, peanuts and may contain wheat, tree nuts and eggs. There’s no indication of the ethical sourcing of Flix Candy’s chocolate. There is also palm oil in there, though very low down on the list.

UPDATED to ADD: Yes, there is a homemade version of this called Puppy Chow. Probably the best option if you want better ingredients.

Kasugai Yuzu Gummy Candy

Kasugai Yuzu Gummy CandyI have learned a lot about world flavors through candy. One that I’ve become obsessed with are Yuzu.

Yuzu is rare in the United States but a popular and hardy variety of citrus in Japan. The flavor is a cross between grapefruit, tangerine with a little note of lemon and bergamot. For the most part the rind of the citrus is used though the juice is also included but not as notable. I was so entranced with the candies and marmalades I’ve been eating that I got a tree for my back yard. (Here’s a photo of a couple that I picked from my tree.)

So when I saw that Kasugai, a makers of one of the best gummis in the world, I bought up two packages. The gummis are more expensive than the European and American varieties, but also a bit more precious and special. The Kasugai Yuzu Gummy Candy comes in a rather light bag, with only 3.59 ounces inside. Each piece is individually wrapped and a bit larger than the mass of an ordinary gummi bear.

The gummis are nearly one inch in diameter, a cute little domed disk. They have a soft, powdery skin instead of a glaze of oil or wax. They smell like lemonade. The flavor inside is a bit more complex. The tartness is good, the texture is smooth with a jello-like chew that dissolves quickly. It’s truly a mix of grapefruit and tangerine, the bitterness of the grapefruit and harsh oily flavor is combined with the fruity, sunny flavors of the tangerine juice.

They’re really satisfying and have a fresh, zesty lingering note. Two or three were plenty as a little treat between meals for me. The individual wrapping means I can throw a few in my bag or just throw them in a dish.

They are ridiculously expensive, I think I spent $3.49 for a bag. But it’s easy to moderate my consumption, I’ve managed to make my two bags last quite while. The intensity of the flavor and the wrappers mean these are more of a solitary treat than the kind that I might mindlessly nibble on during a movie. There are no artificial colors but they do use artificial flavors. They’re made on shared equipment with milk, wheat, shellfish, peanuts and tree nuts.

I saw some new packages of Panda Licorice on store shelves about six months ago. I thought it was cute and inventive. But I’ve already reviewed the Panda licorice line, for the most part, so there was no need for me to pick it up again.

What I didn’t realize is that this is actually a different line of licorice, with a different formula. The Panda Traditional Soft Original Licorice is part of the Panda “confections” line. It was formulated specifically to widen the Panda brand’s appeal and to be sold in more mass-market stores, instead of the narrow appeal of stores like Whole Foods and Trader Joe’s which usually have rules about what sort of ingredients a product can have.

It doesn’t say much on the front of the package, beyond the brand name and the product but it’s quite clear: No artificial colors, flavors or preservatives.

So a quick flip to the back of the package where they talk more about the traditional soft licorice and the heritage of the company that dates back to 1927 in Finland and how meticulous they are and how they use traditional ingredients. Those ingredients?

Molasses, high fructose corn syrup, wheat flour, licorice extract, anise.

Yes, Panda’s licorice that’s otherwise free of artificial flavors, preservatives and colors, suitable for vegans, fat free and Kosher ... it’s made with high fructose corn syrup.

The price for this product? It was $2.99 at Cost Plus World Market for a 7 ounce bag.

The pieces of the Traditional Soft Original Licorice has 87.75 calories per ounce and 1 gram of protein. The pieces are large, sticky and very sweet. The one inch nubs are doughy and a little more “wheat” flavored than the classic variety.

It’s downright wet. In fact that may account for the lower calories on this variety, the fact that they have more water in them.

The licorice flavor is bland, though distinctly natural. It tastes more like anise though the sweetness has that soft licorice note to it. What’s missing for me is the molasses, that earthy flavor that has lots of toffee, burnt sugar, charcoal, oak and beets in it.

It sticks to my teeth. It sticks to my ribs. It sticks to my fingers, it sticks to the package.

Panada All Natural Soft LicoriceIn the interest of fairness, I had to revisit the stuff that’s made Finland famous. The All Natural Soft Licorice is made from an even shorter list of ingredients: Molasses, wheat flour, licorice extract, natural flavor (aniseseed oil). It has 92.14 calories per ounce but 2 grams of protein per serving. The price? It was $2.99 for a 6 ounce bag.

So for the same price you get about 14% less. But what was in that 14%? I have to wonder if it’s just high fructose corn syrup, watering the whole thing down.

The classic pieces in the bag are 3/4” tall and just a little smaller in diameter. They’re also far less sticky. They feel lighter and stiffer than their doughy counterparts. Plus it has all those complex flavors of molasses and licorice and less of the wheat flour.

It’s just baffling to me, since Panda has spent at least 40 years marketing itself in the United States as the premiere natural licorice brand, and competing against all brands, they’re still the fourth largest seller in the US. Much of their marketing, either by their hand or through the efforts of the stores that sell them have specified that Panda contains no “bad stuff” including high fructose corn syrup. So this change not only makes the candy taste bad, I think it’s done to purposely confuse consumers. The package uses the words traditional and original and says lots about how they don’t use those other bad ingredients. (But they do use a dubious ingredient that no one else uses, not even the cheapest of the cheap licorices.)

Lisa Gawthorne, Panda Liquorice spokesperson comments:

“We’re in a strong position and well established within health food shops, but there’s huge scope for growth with this brand. So 2011 sees us focusing on building distribution within convenience and forecourt. We think this bold new launch, along with our strong existing range, is perfectly placed to take on this challenge.” (source)

I tried engaging Panda in a dialogue about this change. I tweeted to them in March (they’ve answered in the past) but didn’t hear anything back. Then I tweeted to them again in June and they responded (though one of their responses they’ve since deleted). Here’s the exchange as it stands now.

Here’s the thing, though all this battle over high fructose corn sweetener, even as a candy writer, I haven’t had much to say. There’s not much to say, because HFCS in candy is incredibly rare. I’ve seen it in probably about five candies I’ve reviewed, and often when it does appear in other candies, it’s part of a whole ingredient like crushed cookies or a jelly, not something the candy company actually made themselves. HFCS just doesn’t behave the same way as a pure glucose syrup would or actual full sucrose. Ordinarily I would just be baffled that someone would use HFCS, but in this case I’m angry because Panda has cultivated their brand so carefully, in many cases specifically saying that they don’t use HFCS, as if everyone else does. When in reality it’s just them, in this lower price point line.
